Prep
- 15ml Water (cold)
- 6g Corn starch
Wet
- 240ml Milk 3.5% [Weihenstephan]
- 230ml Cream 32% [REWE Beste Wahl]
- 30ml Light corn syrup (32 DE) [Karo] • US brand; alternative: rice, agave, or maple syrup
Dry
- 90g Sugar
- 15g Milk powder 1:10 (skim, SMP) [Vita2You]↗
- 1g Salt
DIRECTIONS¶
- Mix the dry ingredients in a small container.
- Bring cream, milk, and syrup to a full rolling boil while whisking.
- Whisk in the dry mix, simmer 2 minutes while whisking.
- Mix cornstarch and water to a smooth slurry, and whisk that into the base, cook 1 minute more.
- Chill quickly, in an ice bath.
- For better results, let the base age in the fridge (covered, lid on), for a few hours or over night. This helps flavor development and gum hydration, especially with unheated bases.
- Freeze for 24h with lid on, then spin as usual. Flatten any humps before that.
- Process with RE-SPIN mode when not creamy enough after the first spin.
