Base recipe that yields ice cream that has the same taste, texture, consistency, and finish as made in a professional kitchen. This can also be found in the book “Jeni's Splendid Ice Creams at Home” (with recipes for lots of flavors).

Scaled to a Creami Deluxe tub, using “European ingredients” (mostly regarding fat content), and sane units of measurement.

INGREDIENTS

Prep

  • 45ml Milk 3.5% [Weihenstephan]
  • 10g Corn starch

Wet

  • 250ml Milk 3.5% [Weihenstephan]
  • 20ml Light corn syrup (32 DE) [Karo] • US brand; alternative: rice or maple syrup
  • 40g Cream Cheese 23% [Exquisa] • click the link for UK / US equivalents
  • 225ml Cream 32% [REWE Beste Wahl]

Dry

  • 95g Sugar
  • 1g Salt

DIRECTIONS

  1. Mix cornstarch slurry: In a small bowl, whisk the cornstarch with a few tablespoons of the milk until smooth.
  2. Heat base: In a saucepan, combine the remaining milk, corn syrup, sugar, and salt. Bring to a gentle boil over medium heat.
  3. Thicken: Stir in the cornstarch slurry and simmer for 1–2 minutes until slightly thickened.
  4. Add cream cheese: Remove from heat and whisk in the softened cream cheese until fully incorporated.
  5. Chill: Cool the mixture quickly (ice bath or fridge) until completely cold — ideally overnight.
  6. Put on the lid, freeze for 24h, then spin as usual. Flatten any humps before that.
  7. Process with RE-SPIN mode when not creamy enough after the first spin.
