Prep

Wet

  • 350ml Water (cold)
  • 65ml Lemon juice
  • 45g Tequila 38 vol%
  • 40ml Lime juice + zest (organic) [REWE Bio] • 2 pieces; 1 lime = 60..65g
  • 15g Cointreau 40 vol%
  • Hydrated Gum Arabic

Dry

  • 80g Isomalt (E953) [GoodBake] • Very low GI, 50% sweetness
  • 10 pcs Sweetener Tablets [LightSüß] • 1 tablet ≃ 4g sugar; ~15 tablets weigh 1g
  • 3g Salt

Fill to MAX

DIRECTIONS

  1. A few hours or a night before you make your Creami, hydrate the acacia gum with warm water, and let it rest.
  2. Zest the limes first, before juicing them.
  3. Add "wet" ingredients to empty Creami tub.
  4. Weigh and mix dry ingredients, easiest by adding to a jar with a secure lid and shaking vigorously.
  5. Pour into the tub and QUICKLY use an immersion blender on full speed to homogenize everything.
  6. Add remaining ingredients (to the MAX line) and stir with a spoon.
  7. Put on the lid, freeze for 24h, then spin as usual. Flatten any humps before that.
  8. Process with RE-SPIN mode when not creamy enough after the first spin.
