Tropical Rum Punch (Deluxe)¶

Tropical Rum Punch blends pineapple, orange, and mango juices with a hint of lime for a bright, fruity base.
Coconut milk adds smoothness and depth, while a touch of Jamaica Rum brings gentle warmth. Pomegranate syrup rounds out the flavor with a subtle tart sweetness.
The result is a refreshing sorbet that tastes like sunshine.

- 30ml Lime or lemon juice
- 15g Pomegranate syrup (grenadine, nar ekşisi) [fersan] • 0.76 ml/g

- 225g Pineapple in juice [REWE] • Can = 227g (140g fruit)
- 45g Jamaica Rum 43 vol%↗
Dry
- 10g Banana Powder (green plantain) [Govinda]↗ • alternatives: (instant) starch, or tapioca
- 20g Coconut Milk Powder 54% [Green Essence]↗
- 20g Inulin [Vit4ever]↗ • Sweetness = 8%; GI ~= 0
- 1g Salt
- 1g Xanthan gum (E415, XG)↗ • 1tsp ≈ 2.8g
Adjust sweetness
- ≈9 drops Flavor drops Peach / Maracuja (sucralose) [IronMaxx] • to taste
DIRECTIONS¶
- In a saucepan, heat the ‘prep’ ingredients to about 90°C.
- Mix the dry ingredients together and whisk them into the hot liquid.
- Let it cool down a bit and blend into the rest of the ‘wet’ ingredients.
- Add flavor drops and stir with a spoon.
- For better results, let the base age in the fridge (covered, lid on), for a few hours or over night. This helps flavor development and gum hydration, especially with unheated bases.
- Freeze for 24h with lid on, then spin as usual. Flatten any humps before that.
- Process with RE-SPIN mode when not creamy enough after the first spin.
