Prep
- 50ml Limoncello di Calabria 28 vol% [REWE]
- 45g SweEX (Erythritol + Xylitol 3:2)↗ • alternative: 60g allulose or dextrose
- 20ml Lime juice + zest (organic) [REWE Bio] • 1 lime = 60..65g; optionally use 2 limes, or 1 lemon
Wet
- 200ml Soy milk 1.6% (sugar-free) [Berief]↗ • Heat and blend with the tofu
- 90g Tofu (plain) [REWE Bio]↗ • If you have it, use silken tofu
- 250ml Soy milk 1.6% (sugar-free) [Berief]↗ • alternative: use any other preferred milk (~2% fat)
Dry
- 15g Salty Stability [Inulin / GMS / CMC / Guar / XG / Salt]↗ • not-as-good substitute: 1.5g guar, 0.5g xanthan, and 0.5g salt
- 10g ❔Waxy Maize Starch (E1442) [Ultratex]↗ • use only if needed for more viscosity
Fill to MAX
- ≈1 drops Flavor drops “Natural” (stevia) [Nick’s] • to taste • unflavored
DIRECTIONS¶
- Zest the lime(s), rub the zest into the sweetener, fill up with the juice and lemon liqueur.
- Let it rest in the fridge for a few hours.
- Soften the tofu in the microwave with part of the milk.
- Blend together with the stabilizer mix until creamy and smooth.
- Add the rest of the milk, and the prepared zest.
- Use your blender on full speed to homogenize everything.
- Add remaining ingredients (to the MAX line) and stir with a spoon.
- Put on the lid, freeze for 24h, then spin as usual. Flatten any humps before that.
- Process with RE-SPIN mode when not creamy enough after the first spin.
