INGREDIENTS

Prep

  • 50ml Limoncello di Calabria 28 vol% [REWE]
  • 45g SweEX (Erythritol + Xylitol 3:2)alternative: 60g allulose or dextrose
  • 20ml Lime juice + zest (organic) [REWE Bio] • 1 lime = 60..65g; optionally use 2 limes, or 1 lemon

Fill to MAX

  • ≈1 drops Flavor drops “Natural” (stevia) [Nick’s] • to taste • unflavored

DIRECTIONS

  1. Zest the lime(s), rub the zest into the sweetener, fill up with the juice and lemon liqueur.
  2. Let it rest in the fridge for a few hours.
  3. Soften the tofu in the microwave with part of the milk.
  4. Blend together with the stabilizer mix until creamy and smooth.
  5. Add the rest of the milk, and the prepared zest.
  6. Use your blender on full speed to homogenize everything.
  7. Add remaining ingredients (to the MAX line) and stir with a spoon.
  8. Put on the lid, freeze for 24h, then spin as usual. Flatten any humps before that.
  9. Process with RE-SPIN mode when not creamy enough after the first spin.
